Baked Cod with Roasted Potatoes and Green Beans

Cod Fillet300 g
Potato200 g
Green Beans150 g
Olive Oil25 ml

Garlic1 clove
Fresh Dill2.5 g
Salt1 g
Black Pepper0.5 g

Instructions

Preheat oven to 200°C (400°F).

Wash and dice potatoes into 1-2 cm cubes. Toss with 2/3 of the olive oil, salt, and black pepper on a baking sheet. Roast for 15-20 minutes, flipping halfway, until tender and lightly browned.

While potatoes roast, pat cod fillets dry. Mince garlic. Chop fresh dill.

In a small bowl, combine remaining olive oil, minced garlic, lemon juice (from half a lemon), chopped dill, salt, and black pepper.

Place green beans on a separate part of the baking sheet (or a second small sheet). Drizzle with a little olive oil, salt, and pepper.

After potatoes have roasted for 10 minutes, add the cod fillets to the baking sheet with the potatoes and green beans. Pour the lemon-dill mixture over the cod.

Return to the oven and bake for another 8-12 minutes, or until cod is opaque and flakes easily with a fork, and green beans are tender-crisp.

Serve the baked cod with roasted potatoes and green beans immediately.
