Quinoa65 g
Broccoli150 g

Dill5 g
Salt0.5 tsp

Instructions

Step 1: Preheat oven to 200°C (390°F). Cook quinoa according to package instructions (typically 1 part quinoa to 2 parts water, simmer for 15 minutes).

Step 2: While quinoa cooks, chop broccoli into florets. Toss broccoli with half of the olive oil, salt, and pepper on a baking sheet.

Step 3: Place cod fillets on the same baking sheet. Drizzle with remaining olive oil, squeeze lemon juice over them, and season with salt, pepper, and chopped dill.

Step 4: Bake cod and broccoli for 12-15 minutes, or until cod is flaky and broccoli is tender-crisp. Serve the baked cod and roasted broccoli alongside the cooked quinoa.
