- Quinoa110 g
- Bell Pepper150 g
- Cherry Tomato150 g
- Bell Pepper150 g
- Olive Oil20 ml
- Salt1 pinch
- Black Pepper1 pinch
- Zucchini150 g
- Dried Herbs1 tsp
Instructions

Preheat oven to 200°C (400°F).

Rinse quinoa thoroughly. In a small pot, combine quinoa with 220ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed.

While quinoa cooks, slice zucchini and bell pepper. Halve cherry tomatoes.

On a baking sheet, toss chicken breast, zucchini, bell pepper, and cherry tomatoes with olive oil, dried herbs, salt, and pepper.
