Baked Chicken Breast with Roasted Summer Vegetables and Quinoa

Chicken Breast320 g
Quinoa110 g
Zucchini150 g
Bell Pepper150 g
Cherry Tomato150 g
Olive Oil20 ml
Dried Herbs1 tsp
Salt1 pinch
Black Pepper1 pinch

Instructions

Preheat oven to 200°C (400°F).

Rinse quinoa thoroughly. In a small pot, combine quinoa with 220ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed.

While quinoa cooks, slice zucchini and bell pepper. Halve cherry tomatoes.

On a baking sheet, toss chicken breast, zucchini, bell pepper, and cherry tomatoes with olive oil, dried herbs, salt, and pepper.

Bake for 15 minutes, or until chicken is cooked through and vegetables are tender-crisp.

Fluff cooked quinoa with a fork. Serve the baked chicken and vegetables alongside the quinoa.
