Rice Flour15 g

Water5 ml

Instructions

Peel and coarsely grate the sweet potato.

In a bowl, combine grated sweet potato, rice flour, 3g sugar, 10ml coconut milk, 5ml water, and a pinch of salt. Mix well to form a thick batter.

Heat 3ml cooking oil in a small non-stick pan over medium heat. Drop spoonfuls of batter into the pan, flattening slightly to form small fritters. Cook for 3-4 minutes per side, until golden brown and cooked through.

For the dip: In a separate small bowl, whisk together 20ml coconut milk and 3g sugar until dissolved. Add a tiny pinch of salt.
