Chicken Breast90 g
Brown Rice100 g
Spring Onion10 g
Cilantro5 g
Fish Sauce5 ml
Olive Oil5 ml
Black Pepper1 pinch

Instructions

Cook brown rice according to package instructions. Set aside.

Dice the chicken breast into small pieces. Thinly slice the spring onion and roughly chop the cilantro.

Heat olive oil in a non-stick pan over medium heat. Add diced chicken and cook until no longer pink, about 3-4 minutes.

In a bowl, whisk eggs with fish sauce and a pinch of black pepper.

Pour the egg mixture into the pan with the chicken. Scramble until cooked through but still moist, about 2-3 minutes.

Stir in most of the sliced spring onion and chopped cilantro, reserving some for garnish.

Serve the scrambled eggs and chicken alongside the cooked brown rice, garnished with remaining spring onion and cilantro.
