Instructions

Heat olive oil in a non-stick pan over medium heat.

Add ground turkey and cook, breaking it up with a spoon, for 3-4 minutes until browned. Drain any excess fat.

Stir in spinach and cherry tomatoes. Cook for 2-3 minutes until spinach wilts and tomatoes soften.

Pour in egg whites, stirring gently to scramble. Cook for 2-3 minutes until eggs are set.
