Sweet Potato100 g
Coconut Milk30 ml
Tapioca Starch15 g
Erythritol0.5 tsp
Unsweetened Shredded Coconut5 g

Instructions

Peel and dice the sweet potato into small cubes. Steam the sweet potato until very tender, about 5-7 minutes.

Mash the steamed sweet potato thoroughly until smooth. Add coconut milk, tapioca starch, and erythritol to the mashed sweet potato.

Mix well until a thick, uniform dough forms.

Roll small portions of the dough into bite-sized balls or small flat discs.

Arrange the bites on a parchment-lined steamer basket. Steam for 3-5 minutes until firm and slightly translucent. Sprinkle with unsweetened shredded coconut before serving.
