Corn80 g
Rice Flour15 g
Egg30 g
Spring Onion10 g
Fish Sauce5 ml
Chili1 g
Vegetable Oil5 ml
Water15 ml
Sugar5 g
Lime5 ml

Instructions

Prepare the nuoc cham dipping sauce: In a small bowl, combine 5ml fish sauce, 5ml lime juice, 5g sugar, 15ml water, and minced chili. Stir until sugar dissolves.

In a separate bowl, combine corn kernels, thinly sliced spring onion, rice flour, and egg. Mix well to form a thick batter. Add a splash of water if too dry.

Heat vegetable oil in a non-stick skillet over medium heat. Drop spoonfuls of the batter into the hot oil, flattening slightly to form fritters.

Cook for 2-3 minutes per side, until golden brown and crispy.

Remove fritters from skillet and drain on a paper towel-lined plate.

Serve the corn fritters immediately with the prepared nuoc cham dipping sauce.
