Vietnamese Savory Chicken & Egg Oatmeal

Quick Oats30 g
Water200 ml
Chicken Breast120 g
Egg1 unit
Soy Sauce15 ml
Fresh Ginger5 g
Curry Powder2 g
Spring Onion10 g
Cilantro5 g
Cooking Oil2 ml

Instructions

Slice chicken breast into very thin strips. Mince ginger and chop spring onion and cilantro (3 minutes).

In a small saucepan, combine oats, water, chicken strips, minced ginger, curry powder, and 10ml soy sauce. Bring to a simmer over medium heat and cook for 5 minutes, stirring occasionally, until oats are cooked and chicken is done.

Meanwhile, heat 2ml cooking oil in a non-stick pan over medium heat. Fry the egg to your liking (2 minutes).

Pour the savory oatmeal into a bowl. Top with the fried egg, remaining spring onion, and cilantro. Drizzle with remaining soy sauce.
