Vietnamese Lamb & Sweet Potato Stir-fry with Fresh Herbs

Lamb140 g
Sweet Potato90 g
Bell Pepper50 g
Onion30 g
Garlic5 g
Ginger5 g
Fish Sauce10 ml
Soy Sauce5 ml
Lime5 ml
Cilantro5 g
Mint3 g
Chili2 g
Vegetable Oil4 ml

Instructions

Finely chop garlic, ginger, and chili. Dice the sweet potato and bell pepper into small cubes. Thinly slice the onion.

Heat vegetable oil in a medium skillet or wok over medium-high heat. Add ground lamb and cook, breaking it up with a spoon, until browned. Drain any excess fat if necessary.

Add chopped garlic, ginger, onion, and chili to the skillet. Sauté for 2-3 minutes until fragrant and onion softens.

Stir in diced sweet potato and bell pepper. Cook for 3-4 minutes until vegetables start to tenderize.

Add fish sauce, soy sauce, and lime juice. Stir well to combine. Cook for another 1-2 minutes.

Remove from heat. Stir in fresh cilantro and mint. Serve immediately.
