Ground Turkey150 g
Glass Noodles30 g
Cucumber0.5 medium
Carrot0.5 medium
Bell Pepper0.3 medium
Spring Onion1 stalk
Cilantro5 g
Mint3 g
Lime0.5 medium
Fish Sauce1.5 tbsp
Rice Vinegar1 tbsp
Erythritol0.5 tsp
Chili0.3 medium
Garlic1 clove
Olive Oil1 tsp

Instructions

Soak glass noodles in hot water for 3-5 minutes until tender, then drain and set aside.

Mince garlic and chili. Finely julienne cucumber, carrot, and bell pepper. Slice spring onion and finely chop cilantro and mint.

In a small bowl, whisk together fish sauce, lime juice, rice vinegar, erythritol, minced chili, and minced garlic to create the dressing.

Heat olive oil in a non-stick pan over medium-high heat. Add ground turkey and cook, breaking it apart, until browned and cooked through, about 3-4 minutes.

In a large bowl, combine the cooked turkey, drained glass noodles, julienned vegetables, spring onion, cilantro, and mint.

Pour the dressing over the salad and toss gently to combine. Serve immediately.
