- Cucumber50 g
- Carrot30 g
- Peanut Butter10 g
- Lettuce50 g
- Fresh Basil5 g
- Fresh Mint5 g
- Fresh Cilantro5 g
- Lime Juice5 ml
- Sugar5 g
- Water10 ml
- Chili Flakes2 g

Prepare vegetables: Thinly slice cucumber and carrot into matchsticks. Wash and tear lettuce into smaller pieces. Pick fresh herb leaves.

Prepare peanut-lime dip: In a small bowl, whisk together peanut butter, fish sauce, lime juice, sugar, and 10ml water until smooth. Add chili flakes if desired.

Fill a shallow dish with warm water. Dip one rice paper sheet into the water for 15-20 seconds until pliable. Lay it flat on a clean surface.

Arrange a few pieces of lettuce, cucumber, carrot, basil, mint, and cilantro near one edge of the rice paper.

Fold the bottom edge of the rice paper over the filling, then fold in the sides. Roll tightly from the bottom up to create a neat summer roll. Repeat for remaining rolls.
