Vietnamese Fresh Vegetable & Herb Rolls with Hoisin-Peanut Dip

Lettuce30 g
Carrot30 g
Cucumber30 g
Mint5 g
Basil5 g
Hoisin Sauce15 g
Peanut Butter15 g
Lime0.5 medium
Water1 tbsp

Instructions

Step 1: Prepare the vegetables: thinly slice the carrot and cucumber into matchsticks. Wash and tear lettuce leaves into smaller pieces. Pick mint and basil leaves.

Step 2: For the dipping sauce, combine hoisin sauce, peanut butter, the juice of half a lime, and 1 tablespoon of water in a small bowl. Whisk until smooth. Add more water if needed to reach desired consistency.

Step 3: Fill a shallow dish with warm water. Quickly dip one rice paper sheet into the water until pliable (about 15-20 seconds). Lay it flat on a clean surface.

Step 4: Arrange a few pieces of lettuce, carrot, cucumber, mint, and basil near one edge of the rice paper. Fold in the sides, then tightly roll from the bottom upwards. Repeat for remaining rolls.

Step 5: Serve immediately with the hoisin-peanut dipping sauce.
