Green Beans150 g
Roasted Peanuts20 g
Fish Sauce10 ml
Lime10 ml
Sugar5 g
Garlic5 g
Chili2 g
Mint5 g

Instructions

Trim the ends of the green beans. Bring a small pot of water to a boil, add green beans and blanch for 2-3 minutes until tender-crisp. Immediately drain and plunge into ice water to stop cooking. Drain well.

Roughly chop the roasted peanuts.

Prepare the dressing: In a small bowl, whisk together fish sauce, lime juice, sugar, minced garlic, and minced chili until sugar dissolves.

In a mixing bowl, combine the blanched green beans, chopped peanuts, and fresh mint leaves.

Pour the dressing over the salad and toss gently to combine. Serve immediately.
