Fresh Mint5 g
Peanut40 g
Lime Juice10 ml
Fish Sauce5 ml
Sugar5 g

Instructions

Peel the grapefruit and carefully segment, removing all white pith. Cut segments into bite-sized pieces.

Finely chop the fresh mint leaves.

In a dry pan over medium heat, toast the peanuts for 3-5 minutes, stirring frequently, until lightly golden and fragrant. Let cool, then roughly chop.

In a small bowl, whisk together lime juice, fish sauce, and sugar until sugar dissolves.

In a serving bowl, combine grapefruit segments, chopped mint, and toasted peanuts. Pour the dressing over and gently toss to combine. Serve immediately.
