Vietnamese Fresh Fruit Salad with Star Anise-Lime Dressing & Toasted Coconut
A refreshing summer fruit salad featuring seasonal strawberries and raspberries, elevated by an aromatic star anise and lime dressing, and finished with crunchy toasted coconut flakes.
Ingredients
- Strawberry100 g
- Raspberry50 g
- Star Anise1 whole
- Lime Juice10 ml
- Sugar8 g
- Water20 ml
- Toasted Coconut Flakes12 g
Instructions

Prepare the dressing: In a small saucepan, combine star anise, sugar, and 20ml water. Bring to a simmer over medium heat, stirring until sugar dissolves. Remove from heat and let steep for 5 minutes. Remove star anise and stir in lime juice. Let cool.

Prepare the fruit: Wash strawberries and raspberries gently. Hull and quarter the strawberries.

Toast coconut flakes: If not already toasted, spread coconut flakes in a dry skillet over medium-low heat. Cook, stirring frequently, for 2-3 minutes until golden brown and fragrant. Watch carefully to prevent burning.
