Mint5 g
Cilantro5 g
Fish Sauce10 ml
Lime0.5 medium
Erythritol5 g
Red Chili5 g

Instructions

Thinly slice the cucumber into rounds or half-moons. Place in a bowl.

Roughly chop the roasted peanuts. Roughly chop fresh mint and cilantro.

In a small bowl, whisk together fish sauce, juice from half a lime, erythritol, and finely minced red chili (to taste) to create the dressing.

Pour the dressing over the sliced cucumber. Add chopped mint and cilantro.

Toss gently to combine. Sprinkle with chopped peanuts before serving.
