Firm Tofu100 g
Lemon Juice1 tbsp
Maple Syrup15 ml
Vanilla Extract0.5 tsp
Mixed Berries75 g
Pumpkin Seeds10 g

Instructions

Step 1: Drain and press the firm tofu to remove excess water. Crumble it into a food processor.

Step 2: Add lemon juice, maple syrup, and vanilla extract to the food processor. Process until smooth and creamy, scraping down the sides as needed. It should resemble ricotta cheese.

Step 3: In a dry skillet over medium heat, lightly toast the pumpkin seeds for 3-5 minutes, stirring frequently, until fragrant and lightly golden. Be careful not to burn them.

Step 4: Divide the tofu 'ricotta' between two bowls. Top with fresh mixed berries and toasted pumpkin seeds. Serve immediately.
