Steamed Sweet Potato with Toasted Sesame Seeds & Coconut Drizzle

Ingredients (Serves 1)

Sweet Potato120 g
Coconut Cream1.5 tbsp
Sesame Seeds1.5 tsp

Instructions

Wash the sweet potato thoroughly. Pierce it several times with a fork.

Microwave the sweet potato on high for 5-7 minutes, or until very tender when pierced. Alternatively, steam it until tender (about 10-15 minutes).

While the sweet potato cooks, lightly toast the sesame seeds in a dry skillet over medium-low heat for 1-2 minutes until fragrant and golden. Be careful not to burn them.

Once cooked, carefully cut the sweet potato in half lengthwise or into chunks.

Drizzle the coconut cream over the warm sweet potato and sprinkle generously with the toasted sesame seeds. Serve warm.
