Spinach50 g
Spring Onion10 g
Olive Oil5 ml
Whole Grain Bread40 g
Salt0.5 tsp
Black Pepper0.3 tsp

Instructions

Slice spring onions thinly and roughly chop spinach. Crack eggs into a bowl, add salt and pepper, and whisk well.

Heat olive oil in a non-stick pan over medium heat. Add spring onions and sauté for 2 minutes until fragrant.

Add spinach to the pan and cook until wilted, about 1-2 minutes.

Pour the whisked eggs into the pan. Stir gently with a spatula, scrambling the eggs until cooked to your desired consistency, about 3-4 minutes.

While eggs cook, toast the whole grain bread.
