Spicy Chicken and Rice Scramble with Vegetables

Ingredients (Serves 2)

Cooked boneless, skinless chicken breast160 g
Large eggs3 pcs
Cooked brown rice110 g
Bell pepper (any color)80 g
Onion60 g
Fresh spinach80 g
Olive oil12 ml
Garlic powder2 g
Onion powder2 g
Chili powder2 g
Cumin1 g
Salt0.5 tsp
Black pepper0.3 tsp

Instructions

Dice the bell pepper and onion into small pieces.

Heat the olive oil in a large non-stick skillet or pan over medium heat.

Add the diced bell pepper and onion and cook for 5-7 minutes until softened.

Add the cooked chicken, cooked brown rice, garlic powder, onion powder, chili powder, cumin, salt, and pepper to the skillet. Stir well and cook for 2-3 minutes to heat through.

Push the mixture to one side of the skillet.

Crack the eggs into the empty side of the skillet and scramble them with a spatula until cooked through.

Add the fresh spinach to the skillet and stir it into the chicken and rice mixture until wilted, about 1-2 minutes.

Combine the scrambled eggs with the chicken and rice mixture.

Serve immediately.
