Slovenian Summer Tofu Scramble with Bell Pepper & Courgette

Instructions

Step 1: Press firm tofu for 10 minutes to remove excess water. While pressing, finely dice the onion and mince the garlic. Thinly slice the bell pepper and courgette.

Step 2: Heat olive oil in a large non-stick pan over medium heat. Add diced onion and sauté for 3-4 minutes until softened. Add minced garlic, sliced bell pepper, and courgette. Sauté for another 3-5 minutes until vegetables are tender-crisp.

Step 3: Crumble the pressed tofu directly into the pan using your hands or a fork. Stir in nutritional yeast, turmeric, black salt, salt, and black pepper. Cook for 3-4 minutes, stirring occasionally, until the tofu is heated through and slightly browned.
