Ingredients (Serves 1)

Egg4 large
Egg White3 large
Spinach100 g
Wild Garlic50 g
Tolminc Cheese30 g
Olive Oil10 g
Salt0.5 tsp
Black Pepper0.3 tsp

Instructions

Finely chop the spinach and wild garlic.

Grate the Tolminc cheese.

In a bowl, whisk whole eggs and egg whites with salt and pepper.

Heat olive oil in a non-stick pan (oven-safe if you want to finish in oven) over medium heat.

Add spinach and wild garlic and sauté for 2-3 minutes until wilted.

Pour the egg mixture over the greens and sprinkle with grated cheese.

Cook for 5-7 minutes until the edges are set and the center is mostly firm. If desired, transfer to a preheated oven (180°C/350°F) for 3-5 minutes to finish cooking through and brown the top.
