Cottage Cheese100 g
Spinach50 g
Spring Onion15 g
Olive Oil2.5 g
Rye Bread30 g
Chives2.5 g
Salt0.5 tsp
Black Pepper0.3 tsp

Instructions

Finely chop the spring onion and fresh chives. Roughly chop the spinach.

In a medium non-stick pan, heat 5g of olive oil over medium heat (1 minute).

Add the chopped spring onion and spinach, sauté until wilted (2 minutes).

In a bowl, whisk the eggs with salt and pepper. Stir in the low-fat cottage cheese.

Pour the egg mixture into the pan with the vegetables. Cook, stirring gently, until the eggs are just set but still moist (3-4 minutes).

While the eggs cook, toast the rye bread (2-3 minutes).

Serve the scramble immediately, garnished with fresh chives, alongside the toasted rye bread.
