Cottage Cheese75 g
Smoked Salmon50 g
Olive Oil2.5 ml
Chives5 g
Salt1 g
Black Pepper0.5 g

Instructions

Step 1: In a bowl, whisk the eggs with a pinch of salt and pepper. Finely chop the chives.

Step 2: Heat olive oil in a non-stick skillet over medium heat. Pour in the egg mixture.

Step 3: As the eggs begin to set, gently push them from the edges towards the center, stirring occasionally for about 3-4 minutes until scrambled but still moist.

Step 4: Stir in the cottage cheese and half of the chopped chives. Cook for another 1-2 minutes until heated through.

Step 5: Divide the scramble between two plates. Arrange the smoked salmon slices alongside. Garnish with the remaining fresh chives and serve immediately.
