- Mushrooms50 g
Instructions

Finely chop the onion (50g) and garlic (5g). Slice the mushrooms (100g). Wash the spinach (200g). (Prep: 5 minutes)

Heat olive oil (15ml) in a non-stick pan over medium heat. Add the chopped onion and sauté until softened, about 2 minutes. Add the garlic and mushrooms and cook until mushrooms release their liquid and soften, about 3 minutes. (Cook: 5 minutes)

Add the spinach to the pan and cook until wilted, about 2 minutes. (Cook: 2 minutes)

While vegetables cook, whisk the eggs (360g) in a bowl with a pinch of salt and pepper. (Prep: 2 minutes)

Pour the whisked eggs over the vegetables in the pan. Cook, stirring gently, until the eggs are set but still slightly moist, about 5 minutes. (Cook: 5 minutes)
