Smoked Trout50 g
Spinach50 g
Onion25 g
Olive Oil2.5 ml

Instructions

Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk for 1 minute until well combined.

Finely chop the onion (25 g).

Chop the spinach (50 g) roughly.

Heat the olive oil (2.5 ml) in a non-stick pan over medium heat for 1 minute.

Add the chopped onion (25 g) and sauté for 2 minutes until softened.

Add the spinach (50 g) to the pan and cook for 2 minutes until wilted.

Pour the whisked eggs into the pan. Reduce heat to low and stir gently with a spatula, scraping the cooked egg from the bottom and sides, for 4 minutes until the eggs are set but still slightly moist.

Flake the smoked trout (50 g) into the pan and gently fold into the scrambled eggs for 1 minute until heated through.

Serve immediately with a slice of lactose-free bread (20 g) per person.
