Smoked Sausage100 g
Spinach100 g
Onion50 g
Oil10 ml
Salt2 g
Pepper1 g
Rye Bread60 g

Instructions

Dice the smoked sausage into small pieces. Finely chop the onion.

Roughly chop the spinach.

In a bowl, whisk together 8 eggs with a pinch of salt and pepper.

Heat 10 ml of oil in a non-stick pan over medium heat for 1 minute.

Add the diced sausage and chopped onion to the pan and sauté for 4 minutes, until the sausage is lightly browned and the onion is softened.

Add the chopped spinach to the pan and cook for 2 minutes, until wilted.

Pour the whisked eggs into the pan with the sausage and spinach. Cook, stirring gently, for 4 minutes, until the eggs are set but still slightly moist.

Serve immediately with the rye bread.
