Instructions

Crack eggs into a bowl, season with salt and pepper, and whisk lightly. Set aside.

Heat olive oil in a non-stick pan over medium heat. Add spinach and sauté for 2-3 minutes until wilted.

Add whisked eggs to the pan with the spinach. Scramble gently until cooked to your desired consistency, about 3-4 minutes.

Stir in the smoked salmon and chives during the last minute of cooking. Heat through.
