Spinach125 g
Spring Onion10 g

Whole Grain Bread62.5 g
Salt1 pinch
Black Pepper1 pinch

Instructions

In a medium non-stick pan, heat 5 ml of olive oil over medium heat for 1 minute.

Add the chopped spring onion and sauté for 1 minute until fragrant.

Add the spinach and cook for 2-3 minutes, stirring until wilted.

While spinach cooks, whisk eggs and egg whites in a bowl with salt and pepper.

Pour the egg mixture into the pan with the spinach. Scramble gently for 2-3 minutes until cooked to your liking.

Toast the whole grain bread slices in a toaster or pan for 2-3 minutes.

Serve the scrambled eggs immediately with the toast.
