Zucchini160 g
Egg100 g
Flour30 g
Parsley6 g
Olive Oil10 ml
Salt2 g
Pepper1 g

Instructions

Grate the zucchini (80 g) and squeeze out excess moisture using a clean cloth or paper towel. Finely chop the parsley (3 g). This takes about 4 minutes.

In a bowl, combine the ricotta (60 g), grated zucchini, chopped parsley, egg (50 g), flour (15 g), salt (1 g), and pepper (0.5 g). Mix until just combined. This takes about 3 minutes.

Heat the olive oil (5 ml) in a non-stick pan over medium heat (allow 1 minute to heat).

Spoon two equal portions of the batter into the hot pan to form fritters. Cook for 4-5 minutes per side, or until golden brown and cooked through (total 8-10 minutes).

Remove from pan and serve immediately.
