Savory Vietnamese Corn Fritters

Ingredients (Serves 1)

Corn70 g
All-purpose Flour15 g
Egg1 small
Spring Onion1 stalk
Fish Sauce0.5 tbsp
Vegetable Oil3 ml

Instructions

Step 1: If using fresh corn, cut kernels off the cob. If using frozen, thaw and pat dry. Finely chop the spring onion.

Step 2: In a medium bowl, combine corn kernels, all-purpose flour, egg, chopped spring onion, and fish sauce. Mix well until a thick batter forms.

Step 3: Heat vegetable oil in a non-stick pan over medium heat. Drop spoonfuls of the batter into the hot pan to form 2-3 small fritters.

Step 4: Cook for 2-3 minutes per side, or until golden brown and cooked through. Remove and place on a paper towel-lined plate to absorb excess oil.
