Ingredients (Serves 2)

Firm tofu150 g
Olive oil7 ml
Yellow onion40 g
Garlic4 g
Bell pepper (any color)50 g
Fresh spinach50 g
Turmeric powder1 g
Salt1 g
Black pepper0.5 g

Instructions

Press the tofu gently to remove excess water, then crumble it into a bowl using your hands or a fork.

Finely dice the onion and mince the garlic. Dice the bell pepper.

Heat the olive oil in a non-stick skillet over medium heat.

Add the diced onion and bell pepper and cook for 3-4 minutes until softened.

Add the minced garlic and turmeric powder and cook for another minute until fragrant.

Add the crumbled tofu to the skillet. Season with salt and black pepper. Cook, stirring occasionally, for 5-7 minutes, breaking up any large clumps, until heated through and slightly browned.

Stir in the fresh spinach and cook for 1-2 minutes until wilted.
