Savory Tofu & Egg Scramble with Rice and Spinach

Ingredients (Serves 2)

large eggs1.5 pcs
firm tofu1.5 oz
cooked rice0.4 cup
fresh spinach0.5 cup
medium onion0.1 cup
garlic clove0.5 pcs
olive oil or dairy-free butter alternative0.3 tbsp
dairy-free soy sauce0.5 tsp
ginger powder0.1 tsp
salt0 pinch
black pepper0 pinch

Instructions

Press firm tofu to remove excess water, then crumble into small pieces.

Finely chop the medium onion and mince the garlic clove.

Heat olive oil or dairy-free butter alternative in a non-stick skillet over medium heat.

Add onion and cook until softened, about 3-4 minutes.

Add minced garlic and ginger powder, cook for 30 seconds until fragrant.

Add crumbled tofu and cooked rice to the skillet. Cook, stirring occasionally, for 5-7 minutes until heated through and slightly browned.

Push the tofu/rice mixture to one side of the skillet. Lightly beat the eggs in a small bowl with a pinch of salt and pepper. Pour eggs into the empty side of the skillet.

Scramble the eggs until just set, then mix them into the tofu and rice mixture.

Stir in the fresh spinach and dairy-free soy sauce. Cook until spinach is wilted.

Season with additional salt and pepper to taste.

Divide the scramble between two bowls and serve hot.
