Savory Tofu, Egg, and Spinach Scramble with Rice

Ingredients (Serves 2)

Large eggs1.5
Firm tofu, pressed and crumbled4 oz
Fresh spinach, packed1.5 cup
Medium onion, diced0.3 cup
Cooked rice0.8 cup
Olive oil1 tsp
Salt0 pinch
Black pepper0 pinch

Instructions

Heat olive oil in a large non-stick skillet over medium heat.

Add the diced onion and cook until softened, about 3-4 minutes.

Add the crumbled tofu to the skillet and cook, stirring occasionally, for 5-7 minutes until some moisture has evaporated and it's slightly browned.

While the tofu cooks, whisk the eggs in a small bowl with salt and pepper.

Push the tofu and onions to one side of the skillet. Pour the whisked eggs into the other side.

Scramble the eggs, pulling them towards the center as they set, until cooked through.

Add the fresh spinach to the skillet. Cook, stirring everything together, until the spinach is wilted, about 1-2 minutes.

Season with additional salt and pepper to taste.

Divide the cooked rice between two bowls. Spoon the scramble mixture over the rice.
