Instructions

Preheat oven to 190°C (375°F). Grease a muffin tin with the olive oil.

Finely chop the onion and mushrooms. Roughly chop the spinach.

In a bowl, whisk the eggs. Stir in the chopped spinach, mushrooms, and onion.
