Step 1: Prepare ingredients. Wash the spinach. If using fresh turkey slices, cut them into smaller pieces if desired. (2 minutes)

Step 2: Heat a medium non-stick pan over medium heat. Add 5 ml of olive oil. Add the smoked turkey slices and cook for 2-3 minutes until lightly browned and fragrant. (3 minutes)

Step 3: Add the spinach to the pan with the turkey. Sauté for 2-3 minutes, stirring occasionally, until the spinach wilts. (3 minutes)

Step 4: While spinach cooks, crack 6 eggs into a bowl. Whisk them well with a fork, then season with 1 gram of salt and 0.4 grams of pepper. (1 minute)

Step 5: Pour the whisked eggs into the pan with the turkey and spinach. Let the eggs set for about 30 seconds before gently pushing them from the edges towards the center with a spatula. Continue to cook and stir for 3-4 minutes until the eggs are cooked to your desired consistency. (4 minutes)
