Instructions

Finely dice the onion (20g per person). Wash and roughly chop the spinach (40g per person). Crack the eggs into a bowl and whisk lightly with salt and pepper.

Heat the olive oil (2.5ml per person) in a non-stick pan over medium-high heat (1 minute). Add the ground turkey (60g per person) and cook, breaking it apart with a spoon, until browned (2 minutes).

Add the diced onion to the pan and sauté until softened (1 minute). Stir in the chopped spinach and cook until wilted (1 minute).

Pour the whisked eggs into the pan. Stir gently with a spatula, scraping the bottom and sides of the pan, until the eggs are cooked to your desired consistency (2 minutes).
