Savory Millet Porridge with Sautéed Mushrooms and Smoked Turkey Breast

Ingredients (Serves 2)

Millet25 g
Mushroom100 g
Onion50 g
Vegetable Broth200 ml
Olive Oil0.3 tbsp
Smoked Turkey Breast125 g
Parsley1 tbsp
Salt0.3 tsp
Black Pepper0.1 tsp

Instructions

Finely chop the onion and slice the mushrooms.

In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened.

Add the sliced mushrooms and cook for another 3-5 minutes until they release their moisture and start to brown.

Stir in the millet and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until millet is tender and liquid is absorbed.

While the millet cooks, dice the smoked turkey breast into small pieces.

Once the millet is cooked, stir in the diced smoked turkey breast and chopped fresh parsley. Season with salt and black pepper to taste.

Serve immediately while warm.
