Lean ground turkey400 g
Cooked white or brown rice250 g
Yellow onion100 g
Broccoli florets150 g
Carrots100 g
Red bell pepper100 g
Garlic (minced)10 g
Fresh ginger (grated)5 g
Soy sauce (dairy-free)40 ml
Rice vinegar20 ml
Sesame oil10 ml
Olive oil10 ml
Salt2 g
Black pepper1 g

Instructions

Dice the yellow onion, carrots, broccoli florets, and red bell pepper into bite-sized pieces.

In a large skillet or wok, heat olive oil over medium-high heat.

Add ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 7-10 minutes. Drain excess fat if necessary.

Add onion, carrots, broccoli, and red bell pepper to the skillet and cook until vegetables are tender-crisp, about 5-7 minutes.

Add minced garlic and grated ginger and cook for 1 minute until fragrant.

In a small bowl, whisk together soy sauce, rice vinegar, and sesame oil.

Pour the sauce over the turkey and vegetables. Stir to coat and cook for 2-3 minutes until the sauce thickens slightly.
