Spinach50 g
Feta cheese20 g
Spring Onion10 g
Olive Oil2.5 ml
Whole Grain Bread40 g
Salt1 g
Black Pepper0.5 g

Instructions

Finely chop the spring onion and crumble the feta cheese.

In a bowl, whisk the eggs with a pinch of salt and black pepper.

Heat olive oil in a non-stick pan over medium heat. Add spring onion and sauté for 1 minute until fragrant.

Add spinach to the pan and cook until wilted, about 2-3 minutes.

Pour the whisked eggs into the pan. As the eggs begin to set, gently push them from the edges to the center, allowing the uncooked egg to flow underneath.

When the eggs are mostly set but still slightly moist, stir in the crumbled feta cheese.

Cook for another 1-2 minutes until eggs are cooked to your liking. Serve immediately with whole-grain bread.
