Smoked pork sausage (lactose-free)50 g
Bell pepper (any color)40 g
Zucchini30 g
Onion20 g
Spinach30 g
Cherry tomatoes30 g
Olive oil5 ml
Garlic2 g
Fresh parsley2 g
Salt0.5 g
Black pepper0.2 g

Instructions

Finely chop the onion and garlic. Dice the bell pepper and zucchini into small pieces. Halve the cherry tomatoes. Chop the smoked sausage into small rounds or cubes.

Heat the olive oil in a non-stick skillet over medium heat.

Add the chopped onion and sausage and cook for 3-4 minutes until the onion is softened and the sausage is slightly browned.

Add the bell pepper, zucchini, and garlic. Cook for another 4-5 minutes until the vegetables are slightly tender.

While the vegetables cook, whisk the eggs in a bowl with salt, pepper, and chopped fresh parsley.

Add the spinach and cherry tomatoes to the skillet and cook for 1-2 minutes until the spinach is wilted.

Pour the whisked eggs over the vegetables and sausage in the skillet. Stir gently with a spatula as the eggs set, scrambling them to your desired consistency.
