Extra Firm Tofu167 g
Yellow Onion50 g
Bell Pepper (any color)50 g
Fresh Spinach17 g
Nutritional Yeast13 g
Unsweetened Dairy-Free Milk50 ml
Olive Oil7 ml
Turmeric2 g
Garlic Powder2 g
Onion Powder2 g
Salt2 g
Black Pepper1 g

Instructions

Press the extra firm tofu to remove excess water. Crumble the tofu into a bowl using your hands or a fork.

Finely dice the yellow onion and bell pepper. Roughly chop the fresh spinach.

In a small bowl, whisk together the nutritional yeast, unsweetened dairy-free milk, turmeric, garlic powder, onion powder, salt, and black pepper. Set aside.

Heat the olive oil in a large non-stick pan or skillet over medium heat.

Add the diced onion and bell pepper and cook until softened, about 5-7 minutes.

Add the crumbled tofu to the pan. Cook, stirring occasionally, for about 5 minutes to lightly brown the tofu.

Pour the nutritional yeast mixture over the tofu and vegetables. Stir well to coat everything evenly.

Add the fresh spinach and cook, stirring constantly, until the spinach wilts, about 1-2 minutes.
