Ingredients (Serves 2)

Cooked Chicken Breast (shredded or diced)3 oz
Cooked Rice0.5 cup
Large Egg1 piece
Frozen Mixed Vegetables0.5 cup
Dairy-Free Soy Sauce (check label)0.5 tbsp
Sesame Oil0.5 tsp
Garlic Powder0.3 tsp
Ginger Powder0.3 tsp
Fresh Spinach1 cup
Olive Oil or Dairy-Free Butter Alternative0.5 tbsp

Instructions

If starting with raw chicken, cook and shred or dice it. If using leftover cooked rice, ensure it's ready.

Heat olive oil or dairy-free butter alternative in a large skillet or wok over medium-high heat.

Add the cooked chicken, cooked rice, and frozen mixed vegetables to the skillet. Stir-fry for 3-5 minutes until heated through and slightly golden.

Push the chicken, rice, and vegetables to one side of the skillet. Crack the eggs into the empty side and scramble them, breaking them up with a spatula.

Once the eggs are mostly set, add the fresh spinach, soy sauce, sesame oil, garlic powder, and ginger powder to the skillet.

Stir everything together until the spinach is wilted and all ingredients are well combined and heated through, about 2-3 minutes.

Taste and adjust seasoning if needed.

Divide the scramble into two bowls and serve immediately.
