Ingredients (Serves 2)

Lean Ground Chicken100 g
Large Egg2 pcs
Potato75 g
Onion25 g
Bell Pepper25 g
Olive Oil5 ml
Garlic Powder2 g
Dried Thyme1 g
Salt2 g
Black Pepper1 g

Instructions

Dice the potato into small cubes (about 1 cm).

Heat 5 ml of olive oil in a non-stick pan over medium heat. Add the diced potato and cook for 8-10 minutes, stirring occasionally, until lightly browned and tender. Remove from the pan and set aside.

While potatoes cook, finely chop the onion and bell pepper.

Add the remaining 5 ml of olive oil to the same pan. Add the ground chicken and cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes).

Add the chopped onion and bell pepper to the pan with the chicken. Cook for another 3-4 minutes until softened.

Return the cooked potatoes to the pan.

In a bowl, whisk the eggs with garlic powder, dried thyme, salt, and black pepper.

Pour the egg mixture over the chicken, potatoes, and vegetables in the pan. Cook, stirring gently, until the eggs are set but still slightly moist (about 2-3 minutes).

Divide the scramble between two plates and serve immediately.
