Savory Chicken & Herb Rice Paper Roll

Ingredients
- Chicken Breast60 g
- Rice Paper Wrappers2 sheets
- Cucumber20 g
- Carrot20 g
- Lettuce10 g
- Fresh Mint5 g
- Soy Sauce5 ml
- Curry Powder1 g
Instructions

Slice chicken breast into very thin strips. Season chicken with curry powder and 2ml soy sauce. Finely julienne cucumber and carrot. Roughly chop lettuce and mint (5 minutes).

Heat a small non-stick pan over medium-high heat. Add seasoned chicken strips and cook until fully cooked through, about 3 minutes. Shred chicken with a fork if desired (3 minutes).

Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for 15-20 seconds until pliable. Lay it flat on a clean surface.

Arrange half of the cooked chicken, cucumber, carrot, lettuce, and mint in a line near one edge of the wrapper. Fold the sides over and roll tightly. Repeat for the second roll (2 minutes).

Serve with the remaining soy sauce for dipping.
