Cooked boneless, skinless chicken breast180 g
Cooked brown rice200 g
Large eggs3 pcs
Bell pepper (any color)150 g
Onion100 g
Fresh spinach100 g
Olive oil10 ml
Garlic powder2 g
Onion powder2 g
Salt1 g
Black pepper0.5 g

Instructions

Dice the cooked chicken into bite-sized pieces.

Dice the bell pepper and onion into small, uniform pieces.

Heat olive oil in a large non-stick skillet over medium heat.

Add the diced bell pepper and onion and cook for 5-7 minutes until softened.

Stir in the cooked chicken and cooked brown rice. Cook for another 5 minutes, stirring occasionally, until heated through and slightly crispy.

Add the fresh spinach, garlic powder, onion powder, salt, and black pepper. Cook for 2-3 minutes until the spinach is wilted.

Push the hash mixture to one side of the skillet, creating space. Crack the eggs into the empty space.

Cook the eggs sunny-side up, over easy, or scrambled, depending on preference. For sunny-side up, cover the skillet for the last 1-2 minutes to set the whites if desired.

Divide the hash onto two plates and top each serving with the cooked eggs.
