Savory Chicken and Spinach Rice Bowl

Ingredients (Serves 2)

Boneless, skinless chicken thighs300 g
Cooked white or brown rice200 g
Yellow onion100 g
Red bell pepper100 g
Fresh spinach100 g
Garlic (minced)10 g
Fresh ginger (grated)5 g
Soy sauce (dairy-free)30 ml
Sesame oil10 ml
Vegetable or chicken broth (low sodium, check for dairy)50 ml
Olive oil10 ml
Salt2 g
Black pepper1 g

Instructions

Slice chicken thighs into bite-sized pieces. Season with salt and pepper.

Dice the yellow onion and red bell pepper.

In a large skillet or wok, heat olive oil over medium-high heat.

Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

Add onion and bell pepper to the skillet and cook until slightly softened, about 3-4 minutes.

Add minced garlic and grated ginger and cook for 1 minute until fragrant.

Add spinach and cook until wilted, about 1-2 minutes.

Return chicken to the skillet.

In a small bowl, whisk together soy sauce, sesame oil, and broth.

Pour the sauce over the chicken and vegetables. Stir to coat and cook for 1-2 minutes until slightly thickened.

Divide the cooked rice between two bowls.
