Cooked chicken breast90 g
Eggs1 g
Onion25 g
Bell pepper25 g
Fresh spinach50 g
Olive oil5 ml
Soy sauce (dairy-free)5 ml
Sesame oil2.5 ml
Salt0.5 g
Black pepper0.3 g

Instructions

Heat olive oil in a large pan or wok over medium-high heat.

Add diced onion and bell pepper and cook until softened, about 3-5 minutes.

Add the cooked chicken breast and cooked white rice to the pan. Stir-fry for 3-4 minutes until heated through and slightly crispy.

Push the mixture to one side of the pan. Add the spinach to the other side and cook until wilted.

In a small bowl, whisk the eggs with salt and black pepper. Pour the eggs into the cleared space in the pan and scramble until cooked.

Combine all ingredients in the pan. Stir in the soy sauce and sesame oil.

Cook for another minute, ensuring everything is well combined and heated.
