Roasted Steak and Vegetable Quinoa Bowls

Ingredients (Serves 2)

Sirloin steak (raw weight)400 g
Broccoli florets300 g
Bell pepper (any color)150 g
Onion100 g
Garlic4 cloves
Olive oil30 ml
Fresh rosemary sprigs2 pcs
Fresh thyme sprigs2 pcs
Salt3 g
Black pepper2 g
Dry quinoa150 g
Water or vegetable broth300 ml
Lemon0.5 pcs

Instructions

Preheat oven to 220°C (425°F).

Cut the sirloin steak into bite-sized cubes or strips. Season with half of the salt and pepper.

Chop the bell pepper and onion into roughly equal-sized pieces as the broccoli florets. Mince the garlic.

In a large bowl, toss the broccoli, bell pepper, onion, and minced garlic with olive oil, remaining salt, and pepper. Add the fresh rosemary and thyme sprigs.

Spread the seasoned vegetables in a single layer on a large baking sheet.

In the same bowl, toss the seasoned steak pieces with a little more olive oil if needed.

Roast the vegetables for 15 minutes.

While the vegetables are roasting, cook the quinoa. Rinse the quinoa under cold water. Combine quinoa and water or vegetable broth in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until liquid is absorbed. Let stand covered for 5 minutes, then fluff with a fork.

After the vegetables have roasted for 15 minutes, add the seasoned steak pieces to the baking sheet with the vegetables. Toss gently to combine.

Return the baking sheet to the oven and roast for another 10-15 minutes, or until the steak is cooked to your desired doneness and the vegetables are tender-crisp.

Remove the rosemary and thyme sprigs from the vegetables.

Divide the cooked quinoa between two bowls. Top with the roasted steak and vegetables.

Squeeze fresh lemon juice over each bowl just before serving for brightness.
